The Best Italian Rainbow Cookie Recipe

Coming from an Italian family, I have learned lots of different ways to make foods and desserts.

To start off with, it was never easy following along. My grandmother would just talk in a very fast speed, telling me what she added in. Everything was an estimate and for some reason, nonnas do not write anything down!

So, low and behold, the infamous rainbow cookies. Another staple in our family. These rainbow cookies are the traditional recipe, coming from an Italian home. You can’t get any better than this recipe!

Ingredients:

1. 4 sticks of unsalted butter

2. 10 eggs

3. 2 1/2 cups of flour

4. Raspberry jam with seeds

5. 1 teaspoon of canola oil

6. 2 1/2 cups of sugar

7. 8 oz. Box of almond paste

8. Food coloring: red, yellow, green

9. 1/2 cup of chocolate morsels

Directions:

1. Preheat oven to 350 degrees. Then, melt butter for about 45 seconds, then add in the sugar and mix well until dissolved.

2. Now you are going to add your eggs into the batter. Add one egg at a time and whisk the egg after every one.

3. Add your almond paste. The almond paste will take a while to whisk because it is a tough substance. Try to make it as smooth as possible, otherwise it’ll be clumpy.

4. Once your almond paste is dissolved, add in the flour and mix again.

5. Once you have a nice, smooth consistency, your now going to divide the batter into 3. Place them into 3 different bowls.

6. Now it is time for the fun part: food coloring! In one bowl mix in the red food coloring, yellow in one, and green in another bowl. You should now have 3 different color batters.

7. You will need 3 10×15 baking pans. Line with wax paper.

8. Place the red, green, and yellow batter into the 3 baking pans.

9. Place in the oven. Bake for about 15 minutes. Keep checking to make sure that they aren’t getting brown. You can even stick a toothpick in it to check if it is cooked. Since they are thin, they will bake a lot faster.

10. Once they are baked, set aside and let them cool for about 30 minutes.

11. Now that all three are cooled, you are ready for the jam. Spread your jam on the red cake, then place the yellow cake on top of the red cake.

12. Spread jam on top of the yellow then place the green cake on top. You should now have all three cakes stacked with jam in between.

13. Now it is time to melt your chocolate. Take your oil and mix in your chocolate morsels in a pot. Keep the flame on low so that you do not burn the chocolate. Mix until the chocolate is blended well and smooth.

14. Take your chocolate and spread it on top of the green. Cut your rainbow cookies into rows and columns and place in the fridge for 30 minutes. You will want to cut before placing it into the fridge so that it doesn’t crack while cutting.

15. Once cooled, take out the cookies and flip over. Spread the chocolate and put sprinkles on the other side and let cool in fridge for 30 minutes.
